High Acid
Grown right here in the Applegate on the SFV estate. This wine is a great food wine. It has high acidity with bright notes of tart cherries. Despite the acidity this wine is very smooth and has a fruity lingering finish. Whether you drink this wine here or at home it is a great choice to pair with your favorite local artisan pizza.
Barbera is what I consider a food wine. Barbera has a relatively high acidity and bright fruit flavors which can work great to pair with a meal. For a wine club release party we paired it with shepherd’s pie. We chose this dish because shepherd’s pie has plenty of fat and starch in the gravy and potatoes. This really gives the wine something to cut through. We also made sure to keep things brighter rather than traditional. This meant using plenty of tomato paste and veggies and getting the Worcestershire sauce mix just right. The trick for that is just adding and tasting as you go till the balance of everything is just right and it is a good match with the wine.
